Ingredients

  • 4 medium sized sweet potatoes
  • 1/2 cup walnuts
  • drizzle of agave

Brown Sugar Spice Mixture

  • 2 tbsp brown sugar
  • 1/2 cinnamon
  • 1/4 allspice
  • 1/4 pumpkin spice

Instructions

  1. Preheat oven to 430 degrees

  2. Prepare a baking sheet with aluminum foil.

  3. Wash each sweet potato really well.  Pierce each sweet potato a few times with a fork or small steak knife

  4. Place sweet potatoes on prepared baking sheet

  5. Check for tenderness after 35 minutes.  If the potatoes aren't fork tender, allow for an extra 5 to 10 minutes

  6. Once potatoes are tender, remove from oven. Slit each potato down the center and top with the brown sugar spice mixture. Add other topping such as walnuts and a drizzle of agave (optional)

Recipe Notes

Allow 35 to 45 minutes depending on the size of the sweet potatoes.

 

 

Although walnuts are high in fat, they are considered a good source of fat.
