  • 1 whole chicken
  • 1 tbsp kosher salt plus 1 teaspoon reserve
  • 1 tsp black pepper
  • 1/4 cup fresh chopped parsley
  • 1-1/2 tsp dried rosemary plus 1 teaspoon reserve (or more to taste)
  • zest of 1 lemon
  • a splash of fresh lemon juice
  • 2 cloves fresh garlic sliced, minced or kept whole
  • 1 small onion sliced


  1. Preheat oven to 425 degrees.
  2. Place a single layer of onion and garlic in a cast iron skillet or oven proof skillet with
  3. Wash and pat dry chicken
  4. Butterfly chicken Place chicken breast side down on a cutting board Take kitchen shears and cut alongside the backbone on each side Discard the backbone
  5. Chop parsley and dried rosemary In a mixing bowl add: parsley, rosemary, lemon zest, olive oil, salt, pepper and mix until well combined
  6. Season both sides of chicken with herb blend mixture and use fingers to rub mixture all over chicken
  7. Place butterfly chicken on top of bed of onions with breast side up and sprinkle reserved salt and rosemary over the top of the chicken breast. Roast for approximately 1 hr 15 mins.
  8. 45 minutes after chicken has roasted in oven, add a splash of lemon juice and baste chicken with juices in skillet. Baste chicken twice.
  9. When chicken is done, baste chicken again with juices in skillet. Let chicken rest for 10 minutes or so and serve

Recipe Notes

In my opinion, a little bit of rosemary goes a long way.
