Peach Arugula Salad is full of texture, flavor, and natural sweetness. This, with the peppery taste of arugula, will be one of your favorite seasonal salads.
4ozarugula(avoid any arugula leaves that are wilted or brown)
2-½cups fresh peaches(sliced to same width )
2cupshouse cucumbers(remove seeds)
Vinaigrette
4tablespooncooking oil(olive oil, grapeseed oil, or avocado oil)
2tablespoonwhite wine vinegar
½tablespoonDijon mustard
½teaspoonshallots(minced)
½teaspoongarlic(minced)
½ teaspoonkosher salt(more if needed)
½tsp parsley(fresh or dried)
1teaspoonhoney
Instructions
Combine all ingredients to make the vinaigrette dressing in a mason jar. Close the lid and shake the ingredients until well combined. Or, place the ingredients in a small bowl and whisk until combined. Set aside.
Wash the peaches and pat dry with paper towels. Then, slice the peaches making sure they are all the same size or close to the same size as possible. Set aside. Repeat this same process for the cucumbers. Set aside.
Wash the arugula then dry thoroughly using a salad spinner. Set aside.
Add the arugula, sliced peaches, and sliced cucumbers to a large salad bowl. Drizzle with your vinaigrette and gently toss until your salad is combined. Do not overdress. If you have leftover vinaigrette dressing, store in the fridge and use within a few days.
Notes
Opt for fresh peaches in which the entire surface is firm to the touch. Avoid peaches that are soft and feel mushy.
Choose fresh arugula that looks vibrant and crisp.
Wash and dry your arugula thoroughly using a salad spinner.
Prep all your ingredients ahead of time before putting this salad together.
Dress the salad with your vinaigrette right before serving and Do Not overdress.
This salad is best served the same day the vinaigrette is added. It hold up pretty good the following day.
