    Easy Peach Arugula Salad

    This Peach Arugula Salad is full of texture, flavor, and natural sweetness. The peppery taste of the arugula combined with the sweetness of the fresh peaches might become one of your favorite seasonal salads. It requires only a handful of ingredients and comes together in minutes.

    Serving Suggestions

    While this salad is delicious on its own, another option is to pair it with:

    Equipment

    • Sharp paring knife for slicing the peaches
    • A large serving bowl or salad bowl
    • Tongs for serving
    • A jar to make the vinaigrette dressing

    Ingredients

    This salad is tossed in a smooth and creamy vinaigrette that balances out the flavors while elevating each bite.

    • Fresh peaches
    • Arugula
    • Cucumbers

    Ingredient Notes

    • Peaches: This recipe calls for fresh peaches. For best results, the entire surface of the peaches should be firm to the touch. Do not use peaches that are over ripe, soft, and old.
    • Greens: Arugula is a wonderful green to pair with peaches, but feel free to use a blend of different greens, butter lettuce, or Fresh Spring Mix Salad.
    • Cucumbers: You can use any type of cucumbers. I used house cucumbers. You can use cocktail cucumbers like I did in my Easy No Mayo Coleslaw recipe. Which ever type of cucumber you use, I recommend that you remove the seeds. This will prevent them from releasing more water which in turn can make your salad watery or runny.
    • Additional add-ins: Chopped walnut (you can also candy them), sliced almonds, pepitas). You can also add sliced or cubed grilled, sauteed, roasted, blackened, or Pan Fried Panko Chicken Breast if you're looking to add protein like I did with my Chicken Strawberry Walnut Salad recipe.

    Toss with the Best and Easiest Vinaigrette

    As a special touch to tie the fresh peaches and arugula salad together use this vinaigrette dressing. It's a balance of sweet, savory, with a hint of tanginess that leaves you craving for more.

    • Avocado oil, olive oil, or grapeseed oil
    • White wine vinegar or red wine vinegar
    • Shallots
    • Fresh garlic
    • Dijon mustard
    • Parsley (dried or fresh)
    • Kosher salt
    • Honey optional but recommended

    How to Make Peach Arugula Salad

    This simple salad with fresh peaches is quick to assemble. So, the next time you need to whip up a quick side, and you have peaches on hand. This is it.

    • Slice peaches into same size.
    • Then, slice cucumbers.
    • Add sliced peaches, cucumbers, and arugula into large salad bowl.
    • Gently toss all ingredients.
    • Drizzle with vinaigrette then gently toss with tongs to make sure all ingredients are lightly coated.
    • Do not overdress the salad with salad dressing.

    Top Tips

    • Opt for fresh peaches in which the entire surface is firm to the touch. Avoid peaches that are soft and feel mushy.
    • Choose fresh arugula that looks vibrant and crisp.
    • Wash and dry your arugula thoroughly using a salad spinner.
    • Prep all your ingredients ahead of time before putting this salad together.
    • Dress the salad with your vinaigrette right before serving and Do Not overdress your salad.
    • It's best served the same day the vinaigrette is added. But, it holds up pretty good the next day.

    FAQ

    Can I make this salad ahead of time?

    Absolutely, prep each ingredient and store them in separate airtight containers with tight fitting lids or in individual large ziploc baggies. Then, right before serving, add the ingredients to a large salad bowl and add your vinaigrette and gently toss.

    Easy Peach Arugula Salad

    Equipment

    • Cutting board
    • Paring knife
    • Salad spinner
    • Large salad bowl

    Ingredients 

    • 4 oz arugula (avoid any arugula leaves that are wilted or brown)
    • 2-½ cups fresh peaches (sliced to same width )
    • 2 cups house cucumbers (remove seeds)

    Vinaigrette

    • 4 tablespoon cooking oil (olive oil, grapeseed oil, or avocado oil)
    • 2 tablespoon white wine vinegar
    • ½ tablespoon Dijon mustard
    • ½ teaspoon shallots (minced)
    • ½ teaspoon garlic (minced)
    • ½ teaspoon kosher salt (more if needed)
    • ½ tsp parsley (fresh or dried)
    • 1 teaspoon honey

    Instructions

    • Combine all ingredients to make the vinaigrette dressing in a mason jar. Close the lid and shake the ingredients until well combined. Or, place the ingredients in a small bowl and whisk until combined. Set aside.
    • Wash the peaches and pat dry with paper towels. Then, slice the peaches making sure they are all the same size or close to the same size as possible. Set aside. Repeat this same process for the cucumbers. Set aside.
    • Wash the arugula then dry thoroughly using a salad spinner. Set aside.
    • Add the arugula, sliced peaches, and sliced cucumbers to a large salad bowl. Drizzle with your vinaigrette and gently toss until your salad is combined. Do not overdress. If you have leftover vinaigrette dressing, store in the fridge and use within a few days.
